Carrot Oatmeal Applesauce Muffins

After posting that last recipe, I thought I might need to make it up with something a little more healthy.

2 large carrots - shredded
2 cups quick oats
2 cups whole wheat flour
2 tsp cinnamon
1 tsp nutmeg
1 tsp. baking soda
1 tsp. baking powder
2 cups milk
1 cup unsweetened applesauce
3/4 cup brown sugar
3 large eggs

Preheat oven to 400.

Combine flour through cinnamon in bowl; set aside. Combine remaining ingredients in another bowl. Mix wet into dry just until combined.

Bake for 20-25 minutes or until done.
